Well, we wanted to take a moment to clear up a common misconception about the term "acidity" in the coffee industry – something many coffee drinkers misunderstand!

In the coffee industry, when we refer to coffee as having "acidity," we’re not talking about how it tastes but rather how it affects your stomach. Coffee acidity refers to how acidic the coffee is in terms of pH and more importantly, how it impacts your digestive system.

Some coffees with high acidity, like our Wild West White, can also cause a bit of discomfort for those with sensitive stomachs. On the other hand, when we say a coffee has "low acidity," like our Cowboy Coffee, it means it’s gentler on the stomach, offering a smoother experience with less of that sharp, sometimes sour feeling.
